Sweet potato dumpling is an easy and healthy after school snack made with sweet potatoes, coconut and sugar.

Sweet potatoes – I have used the purple variety today.
Wash, boil / pressure cook and peel the sweet potatoes. If using pressure cooker, 2 whistles is enough.
Mash using a fork
Add fresh shredded coconut.
Add a little sugar if you have a sweet tooth.
When she ate this for the first time, my disappointed little one angrily declared that the name of sweet potatoes should be changed to ‘not-sweet-potatoes’ or ‘normal potatoes’ as they are not sweet (like sugar). She was upset that she got duped by the name. 😀
You can eat it as such or make them into balls. This is highly perishable so consume it as soon as it is made.
