This is a simple but healthier recipe for mixed vegetables noodles without using the masala packet that comes with the noodles. With the recent ban of Maggi noodles in India, I am all the more wary of using their masala / taste maker packets.
Finely chop vegetables. I have used, shredded carrots, beans, cabbage, green onions, green chillies and red chillies.
Finely chop ginger and garlic.
Cook the noodles in water.
Heat oil and stir fry ginger and garlic.
Add vegetables one by one. Add the vegetable that takes longer to cook first. Fry carrots.
Then add the cabbage.
Add beans. Add a teaspoon of soy sauce (optional). Soy sauce is salty so test and add salt. Sprinkle pepper powder.
Add cooked noodles and mix. Stir fry for two minutes.
