Caramelized Onions / Vengaaya kootu is a 5 minute side dish recipe for rotis. Ideal for days when the refrigerator has nothing but onions. 🙂
Heat oil and fry some fennel seeds.
Fry curry leaves.
Add chopped onions and fry them til they are golden brown.
Add half to one teaspoon of sugar and stir fry till the sugar melts and becomes slightly brown and coats the onions. You can also add a little bit of red chili powder and stir fry for a few minutes. I add the powder as I like hot and sweet taste.
Add the required amount of salt.
Garnish with coriander leaves.
